How to Make Creamy Strawberry Swirl Ice Cream at Home

Ingredients:

Heavy Cream 2 cups
Whole Milk 1 cup
Sugar 3/4 cup
Salt 1/4 tsp
Egg Yolks 5
Strawberries 1 1/2 cups
Lemon Juice 1 tbsp
Vanilla Extract 1 tsp

Instructions:

  1. In a saucepan, heat the heavy cream, whole milk, sugar, and salt over medium heat until the sugar has dissolved.
  2. Let the mixture simmer for 30 minutes, stirring occasionally.
  3. In a separate bowl, whisk together the egg yolks until they become pale yellow.
  4. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
  5. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  6. Remove the mixture from the heat and let it cool completely.
  7. Wash and hull the strawberries and puree them in a blender or food processor until smooth.
  8. In a small saucepan, heat the strawberry puree over medium heat until it begins to bubble.
  9. Reduce the heat and let it simmer for 10 minutes, stirring occasionally.
  10. Remove the strawberry puree from the heat and stir in the lemon juice and vanilla extract.
  11. Let the strawberry mixture cool completely.
  12. Once both mixtures are cooled, pour the ice cream mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  13. In a freezer-safe container, layer the ice cream mixture and the strawberry mixture, swirling them together with a spoon or knife.
  14. Freeze for at least 4 hours before serving.
